I be honest — for the longest time, I thought great fried rice was something you could only get from a restaurant. Then one night, staring at leftover rice in my fridge and a couple of chicken thighs, I decided to just go it. That first homemade batch changed everything. Now this is my go-to weeknight dinner, and once you try it, I have feeling it become yours too. The secret is simpler than you'd think, and I'm sharing everything I've learned right here.
Easy Chicken Fried Rice
This the version I make on busy weeknights when I want something hearty, fast, and satisfying. Day-old rice is the real game changer here — it fries up perfectly without clumping, giving you those slightly crispy bits that make every bite so good. Pair it with tender chicken pieces and a handful of veggies, and you've got a full meal in pan. My family asks this at least once a week, and I never tired of making it.
- 2 cups day-old cooked jasmine rice
- 1 lb boneless, skinless chicken breast or thighs, diced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup frozen peas and carrots, thawed
tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
large eggs, lightly beaten
green onions, sl>Salt and white pepper to taste
- Season your diced chicken lightly with salt and white pepper. Heat one tablespoon of oil in a large wok or skillet over high heat until shimmering.
- Add the chicken and cook for about 4to 5 minutes, stirring occasionally, until cooked through and lightly golden. Remove from wok and set aside.
- Add remaining oil to the wok. Toss in the garlic and onion stir-fry for about 1 minute until fragrant and slightly softened.
- Add the peas and carrots and stir-fry for another minute.
- Push everything to one side of the wok and pour beaten eggs into the empty space. Scramble them gently until just set, then break them up and mix into the vegetables.
- Add the cold rice to the wok, breaking up any clumps with spatula. Press the rice against the hot surface and let it sit for 30 seconds before stirring — this is what creates those crispy bits.
- Return the cooked chicken to the wok. Drizzle in the soy sauce, oyster sauce, and sesame oil Toss everything together until evenly coated and heated through.
- Taste and adjust seasoning, then finish with sliced green onions before serving hot.
Veg Schezwan Chicken Fried Rice
If you love a little heat, this Schezwan-style version is going to be your new obsession. I had something like a little Indo-Chinese spot near my old apartment, and I spent months trying to recreate it at home. The Schezwan sauce brings this smoky, spicy, arlicky punch that takesfried rice to a completely different level. It looks impressive the plate, but I promise it's just as easy to pull off as the classic version.
- 2 cups day-old cooked basmati or jasmine rice
- 1 lb chicken breast, thinly sliced
- 2 tablespoons Schezwan sauce (store-bought or homemade)
- 2 tablespoons vegetable oil
- 41 teaspoon fresh ginger, grated
- 1/2 cup bell peppers, diced (mix of red and green)
- 1/2 cup cabbage, shredded
- 1/4 cup spring onions, chopped
-
eggs, scrambled
-
- Marinate the sliced chicken in one tablespoon of soy sauce, pinch of pepper, and half Schezwan sauce for at least 15 minutes. The longer, the better if you have time.
- Heat oil in a wok over high heat. Cook the marinated chicken for 4 to 5 minutes until cooked through and slightly charred at the edges. Set aside.
- In the same wok, add touch more oil if needed and fry the garlic and ginger for about 30 seconds until fragrant.
- Add the bell peppers and cabbage. Stir-fry over high heat for 2 minutes so veggies stay crisp and vibrant.
- Scramble the eggs into the wok, mixing them in with the vegetables as they cook.oss everything together. Let to 45 seconds undisturbed to get a little on the bottom then stir and repeat once twice.Stir in the remaining Schezwan sauce, soy sauce, chili sauce, and rice vinegar. Toss until every grain of rice is coated in that gorgeous red sauce the cooked chicken back in and mix well. Top with spring onions and serve immediately while's still steaming hot
Whether you go or bring Schezwan heat, homemade chicken fried rice is one of those recipes that pays you back every single time. It's quick, flexible, and honestly better than takeout once you get the hang of it. Try both versions and see which one steals the show at your table — a feeling it'll be tough call.
