Let's be honest — figuring out what to bring for lunch every single day is exhausting. I used to stand in front of the fridge every morning with absolutely no plan, and I'd end up grabbing something overpriced near the office that left me sluggish by 2PM. That's when I got serious about meal prepping, and it genuinely changed my whole week. These two recipes are now staples in my Sunday routine. They're filling, healthy, and honestly pretty fun to put together. Give them a try and see how much smoother your workweek feels
Buffalo Chicken Wrap
This buffalo chicken wrap is one of those meals that feels indulgent but is actually really balanced. The spicy buffalo sauce gives it a serious flavor punch, and when you wrap everything up in a whole wheat tortilla with crisp lettuce and a drizzle of cool ranch, it's honestly hard to believe you made it yourself. I usually prep four or five of these on Sunday and they hold up beautifully in the fridge through Thursday
2 boneless, skinless chicken breasts
3 tablespoons buffalo sauce
1 tablespoon olive oil
4 large whole wheat tortillas
1 cup shredded romaine lettuce
1/ cup shredded carrots/4 cup thinly sliced celery
1/4 cup crumbled blue cheese or ranch dressing
Salt and pepper to taste
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat and cook chicken for 6 to 7 minutes per side until cooked through.
Let the chicken rest for 5 minutes, then slice or shred it into bite-sized pieces.
Toss the chicken in buffalo sauce until evenly coated.
Lay tortilla flat layer with lettuce, carrots, celery, and the chicken.Drizzle with ranch dressing or sprinkle blue cheese on top.
Fold in the sides of the tortilla and roll it up tightly.
Wrap each finished wrap in foil or plastic wrap and store in the fridge for up to 4 days.
Healthy Meal Prep Ideas For Lunch
Sometimes don't want just one thing to eat all — you want variety without spending your entire Sunday the kitchen. This approach to meal prepping is about building modular lunches with grains, proteins, and veggies that you can mix and match. I started doing this when bored eating the same exact meal on repeat, and it works so well. You prep components separately, then assemble them into different combinations throughout the week.
1 cup dry quinoa or brown rice
cups canned chickpeas, drained and rinsed
medium sweet potatoes, cubed
2 cups broccoli florets
1 red bell pepper, sliced
tablespoons olive oil
1 teaspoon smoked paprika
Your favorite sauce dressing for serving (tahini, lemon vinaigrette, or hummus all work great)
Preheat your oven to 400°F and line two baking sheets with parchment paper.
Toss sweet potato cubes and broccoli florets separately olive oil, garlic powder, smoked paprika, salt, and pepperSpread the vegetables a single layer across the baking sheets and roast for 25 to 30 minutes, flipping halfway through.
While the vegetables roast, cook quinoa or brown rice according to package directions and let it cool completely.
Pat the chickpeas dry,oss them with a little olive oil and seasoning, and roast on separateray for 20 minutes until slightly crispy.
Slice the red bell pepper and keep it raw crunch.
Divide the grains, roasted vegetables, chickpeas, and raw bell pepper evenly into containers.
Store separately in small containers and add it right before eating so stays fresh.
Refrigerate for up to 5 days and enjoy different combination each day by rotating your toppings and sauces.
