If you've ever stared into your fridge on a Wednesday night with zero motivation to cook, meal prep is genuinely a game changer. I started doing it a few years ago out of desperation, and now it's just part of my Sunday routine. The best part? You don't need to be a professional chef or spend your entire weekend in the kitchen. A couple of hours, some solid recipes, and the right containers are all you really need. Snacking is where most us fall off track and I used worst about grabbing whatever was convenient. Prepping snacks ahead of time completely changed that for me. When healthy options are already portioned and ready to grab, the temptation to reach for chips or something processed drops dramatically. These little prep sessions take maybe 30 minutes, and they carry me through the whole week without even thinking about it.

  1. Hard-boil your eggs by placing them in a pot of cold water, bringing to a boil, then reducing heat and simmering for 10 minutes. Transfer to an ice bath and peel once cool.
  2. Wash and dry all vegetables thoroughly before cutting

Honestly, chicken burrito bowls might be my all-time favorite meal prep recipe. They're filling, packed with protein and fiber, and they reheat incredibly well. I usually make four or five servings on Sunday, and by the time Thursday rolls around I'm still genuinely excited to eat them. You can customize toppings based on what you like but this base recipe is one I keep coming back to every single week.

  1. Cook the rice according to package instructions. Once done, fluff with a fork and set aside to>Season chicken breasts on both sides with cumin, chili powder, garlic powder, salt, and pepper.
