- 2 brioche buns, split/2 lb ground beef (80/20 blend)
- 2 large yellow onions, thinly sliced2 slices Gruyère cheese tbsp olive oil
- 1 tbsp unsalted butter
- 1 tsp Worcestershire sauce
2 tsp garlic powder/2 tsp onion powder
- Salt and black pepper to taste1 tsp fresh thyme leaves2 tbsp Dijon mustard
- Handful of baby arugula forpping

Form into two oval patties roughly the shape of your bunsHeat a cast iron skillet or grill pan over medium-high heat. Cook the patties for about 3 to 4 minutes per side medium doneness. In the last minute of cooking, lay slice of Gruyère on each patty and cover pan briefly melt the cheese.
- While the patties rest, toast the brioche buns cut-side down in the same pan for to 2 minutes until lightly golden.Spread Dijon mustard on the bottom half of each bun. Place cheesy patty on top, followed by a generous heap of caramelized onions.
- Add handful of arugula on top for a peppery contrast then press the top bun on and serve right away while is still warm and melty.
