Vegetable casseroles are one of my favorite things to make in the slow cooker because they're hearty, satisfying, and honestly way easier than people expect. Whether you're trying to eat more plant-based meals or just want a comforting dish without lot of fuss, these two recipes have become regulars in my kitchen rotation Let me walk you through both of them.
Slow Cooker Vegetable Casserole
This southern-inspired vegetable casserole is pure comfort food. It's the kind of dish my grandmother would made on Sunday afternoon, except now slow cooker does all the heavy lifting. The vegetables get incredibly tender, the flavors meld together beautifully, and every bite tastes like it took effort than it actually did. I make this one when I want something familiar and warming, and it never disappoints.
- 2 cups diced potatoes
- 1 cup sliced carrots
- 1 cup chopped celery
- 1 medium onion, diced
- 1 cup frozen green beans
- 1 cup frozen corn
- 1 can (105 oz) cream of mushroom soup

- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
cup shredded cheddar cheese (optional, for topping)
- Dice and prep all your vegetables so is roughly the same size for even cooking.
- Add the potatoes, carrots, celery, and onion to the bottom of your slow cooker.
- Layer the frozen green beans and corn on top of the fresh vegetables.
- In a small bowl, whisk together the cream of mushroom soup, vegetable broth, garlic powder, onion powder, salt, and pepper.
- Pour the soup mixture evenly over all vegetables in slow cooker.
- Place the lid on and cook on low for 6to 7 hours or on high for 3 to 4 hours, untilatoes and carrots are fork-tender.
- If you're using cheese, sprinkle it over the top during the last 15 minutes of cooking and replace the lid until melted.
- Give a gentle stir before serving and taste for seasoning adjustments.
Hearty Slow Cooker Vegetable & Bean Casserole
This one is my go-to when I want something a little more filling and protein-packed. The beans it seriously satisfying, and the combination of root vegetables with warm spices gives it this deep, rich flavor that keeps coming back for seconds. It's also completely vegan as written, which makes it a great option I'm cooking for friends with different dietary preferences Honestly, even meat-lovers at my table clean their bowls with this one.
- 1 can (15 oz) chickpeas, drained and rinsed1 can (15 oz) cannellini beans, drained and rinsed
cups diced sweet potatoes
- 1 cup diced parsnips
pped zucchini
- 1 can (14.5 oz) diced tomatoes
cups veget- 3 cloves garlic, minced1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp turmeric
- Fresh parsley for garnish
- Add sweet potatoes and parsnips to the slow cooker first since they take the longest to cook through.
- Add the chickpeas, cannellini beans, zucchini on top of the root>Pour in the diced tomatoes with their juices and the vegetable broth.
the minced garlic, smoked paprika, cumin, turmeric, salt, and pepper, then stir everything gently to combine.
- Cover cook on low for 7 to 8 hours or on high for 4 hours, until the sweet potatoes are tender.Taste and adjust seasoning before serving, adding more paprika or cumin if you want a bolder flavor.
- Ladle into bowls and finish with a generous handful of fresh chopped parsley on top.
- Serve asis or over bed of rice or crusty bread for an even heartier meal.
